Corato is a sun-drenched hilltop town perched on the Murge plateau in Puglia, the sun-baked heel of the Italian boot. For over two thousand years — since Roman times, when writers praised the extraordinary richness of Puglian oil — this land has been inseparable from the olive. The ancient twisted trees that line its terraced groves are not decoration. They are living history, many of them centuries old, their roots reaching deep into the limestone and red earth that gives Corato Oro its unmistakable character.

At the heart of our oil is the Coratina olive — a varietal found almost nowhere else on earth in its pure form. Bold, robust, and fiercely individual, the Coratina is celebrated by olive oil experts worldwide for one extraordinary quality: its naturally exceptional concentration of polyphenols. These are the powerful antioxidants that give the oil its peppery, almost spicy finish — and that make it, scientifically, one of the healthiest foods you can put on your table. In 2024, a Coratina EVOO from Puglia was ranked the 4th healthiest olive oil in the world by EVOOLEUM, one of Europe's most respected competitions.
We harvest entirely by hand every October, at the precise moment when the olives reach peak ripeness — not a day early, not a day late. Within 24 hours of picking, they arrive at our mill where they are cold pressed at temperatures below 27°C. No heat. No chemicals. No second press. The result is a first cold press extra virgin oil with acidity below 0.3% — less than half the international standard — and polyphenol levels that can reach up to 999 mg/kg, nearly ten times that of a typical supermarket olive oil.
Corato Oro is not blended with oils from other regions or countries. It is not adjusted, corrected, or filtered beyond what is necessary. Every bottle is a direct, honest expression of one place, one varietal, one harvest — and the two thousand years of knowledge that go into producing it.
